The Perfect Spring/Summer Cupcakes!




Ohhhhhh golly. Don't mean to toot 'me own horn but how bleddy yummy do these look?
I'm slowly starting to become much better with the ol' baking malarky, throwback to 3 years ago and I couldn't even bake the sponge!

Now I can create something that actually resembles a cake, wooooo! So because of that, I thought I would share the recipe with you, because y'know, who doesn't love cake really? the answer should be "me" as I'm trying so hard to stick to a diet at the moment haha!



Ingredients;
175g of softened butter.
175g of caster sugar.
3 eggs.
175g of self-raising flour.
Icing sugar.

You will get between 15-20 cupcakes out of this!


Method;

Step 1;
- preheat your oven to 170 C / Gas 3


Step 2;
- combine the butter and sugar until light and fluffy.


Step 3;
- gradually mix in the eggs, adding only a little at a time.


Step 4;
- add the flour a little at a time, the more mixing you do, the more air will get in the cake.


Step 5;
- baking time will vary depending on the size of the cupcakes, mine took around 25minutes, however they could be done between 14-30 minutes. Keep checking them until they are a golden brown and bounce back to the touch. obvs try not to burn yourself though ay.


Step 6;
- whilst the cupcakes are cooling, melt white chocolate over hot to boiling water, and cover the strawberries part way, and pop them into the fridge as soon as you've finished.


Step 7;
- melt milk or dark chocolate over hot to boiling water, and place into a piping bag, chocolate hardens quickly, so this was the most efficient way I've found of drizzling chocolate! & carefully drizzle the chocolate over the strawberries in a zigzag motion. It's important the white chocolate coating is dry when you do this.


Step 7;
- making the butter icing; I don't actually use exact measurements here, I use softened butter; around 140g, and add the icing sugar a little at a time until it's at the consistency I want/need, until you find it tricky to get it off the spoon. 


Step 8;
- pipe, or spread, the icing on as you wish. I used a piping bag for mine, I snipped the end off as I wanted a perfect round edge. :)
